Vin de Pays de l'Herault Galibaou du Russe Domaine Vaisse 2022

At Aniane, Pierre Vaïsse began in 2007 with two hectares, trained by Laurent Vaillé of Grange des Pères and Frédéric Pourtalié of Montcalmès. Farming pebble and red-clay soils, he ages his reds patiently for two years, crafting wines built for the cellar rather than the aperitif.

Galibaou du Russe should show spiced aromatics of grey pepper with garrigue and smoky, truffle-like notes, grown on Pierre Vaïsse's pebble and red-clay Aniane vineyard. The 2022 pairs well with slow-cooked lamb — a structured, patiently aged Languedoc red.
