In Meursault, Jean-Philippe Fichet rebuilt an estate almost from scratch after losing his leased vines in 1991. Farming organically with meticulous, low-yield precision, his Chardonnays across Meursault, Auxey-Duresses and Monthélie rival Burgundy's most celebrated names.

Sous le Cellier is a village white Monthélie on limestone-rich soils. The 2023 should show fresh citrus and orchard fruit with the domaine's hallmark tension, aged a minimum of eleven months in barrel or demi-muid.
