Domaine Coillot
Founded in the 1960s in Marsannay by Bernard Coillot, Domaine Coillot is today run by his son, Christophe Coillot. The estate covers 11 hectares across 12 appellations, with vines aged between 20 and 65 years and consistently low yields, resulting in a small annual production of around 50,000 bottles.
Committed to expressing terroir with minimal intervention, the domaine practices sustainable farming without insecticides, pesticides, or herbicides. All grapes are hand-harvested, fermented with indigenous yeasts, and vinified without chaptalization or additives. Long, temperature-controlled fermentations are followed by 18 months of aging in oak barrels, allowing the wines to develop depth while retaining clarity and balance.
